ORIGINAL NOTE / Ingredient functions
BBE / THE BAKING NOTEBOOKIngredients as questions about function
Read the role described by the source before turning an ingredient into a replacement rule.

Read the source.
Keep the question.
Return to the detail.
Ask what the source explains
Begin with the explanation in a complete attributable reference. Name the ingredient and the particular question you are considering. An ingredient label alone does not supply the full context of a formulation. Keep the relevant passage beside your note so that a later reader can distinguish the source’s actual explanation from a general statement you have added from memory.
Keep the recipe in view
An ingredient is being discussed within a particular recipe and intended outcome. Read that context before moving the explanation into another formulation. A familiar name or visually similar result does not establish that every surrounding condition is equivalent. This publication does not supply substitution rules or revised formulas; it helps keep the question and the limits of a source visible.
Name the variable
If a learning discussion concerns a proposed comparison, identify the particular variable under consideration. Do not describe several undocumented changes as though they isolated one ingredient’s role. Keep the actual authorised task and responsible guidance beside the question. A clear reading note can prepare a discussion without authorising an experiment or deciding which practical changes should be attempted.
Describe meaningful observations
Ask which observations would help address the agreed question in an educator-approved activity. Keep what was actually recorded separate from an explanation of why it occurred. A result can be worth discussing while leaving more than one interpretation open. Avoid presenting a finished photograph or an attractive texture description as independent proof that a proposed ingredient explanation has been established.
Do not invent validation
An educational note is not a validated revised recipe. A successful-looking attempt does not by itself establish repeatability, suitability or handling requirements. Actual practical decisions need appropriate complete references and the responsible process. Keep uncertainty in the account rather than attaching a confident claim to a small set of observations that cannot support the full conclusion being proposed.
Write the return question
Finish with the point that should be clarified next: the source’s wording, the scope of the comparison or the context of an observation. Name who should address it and retain the complete reference. The purpose is to support a more precise learning conversation, rather than to convert an ingredient list into a collection of unsupported replacement instructions or universal rules.
